Balanced cuisine

The variety and refinement of recipes places the Arab-Andalusian cuisine among the best world cuisine.

The combination of different spices will introduce you to new flavors that will exalt your senses.

The products used are fresh and seasonal. We go to the market every day. The bread is homemade and cooked in the neighborhood community oven.

The region produces year-round vegetable so the Moroccan cuisine is balanced, you will easily reach the goal of 5 fruits or vegetables per day.


The breakfast

Breakfast is served from 8:00 am to 10:00 am or in the patio or on the terrace.It is the most important moment of the day, so before you start to explore the medina you will Energize with a fresh fruit juice, tea or coffee and some Moroccan specialties like sweet potato jam, crepe "mlaoui" cakes "harcha" or a barley bread served with argan oil and black olives.

 

The dinner

You will taste specialties simmered for you by Fatima and Meryem.

For starters we serve various salads such as bean Bissara the Tchachouka, Duo of red and green peppers grilled, the salad of carrot and orange juice, macrota, tomatoes with honey ... or soup hot or cold depending on the season.

The main dish is hearty, you will taste the barley couscous of Fez, the famous pastilla with chicken and our tagines declined to infinity. The favorite recipes of our guests : fish tagine with vegetables, camel tagine with dates, the tagine of lamb with pears and honey

Desserts are varied: the pear with almond’s milk, pastilla with milk and fruits orange pie, spicy fruit salad and of course for "chocolate addicts" the chocolate fondant.

To accompany these dishes you can enjoy a small selection of Moroccan wines, red, rosé and white from Casablanca and Meknes.

Regarding dinner, we offer several options depending on your appetite.

The full menu

(entrees + main course + dessert)

is 220 dirhams (20 euros) per person

And for children under 8 years old we propose the formula at 110 Dirhams (10 euros)

Entrees + omelet (*) + dessert

(*) We can also offer pasta or rice with tomato sauce.

Host tables

We serve a traditional fassie cuisine whose origins and influences are many. It include among others the culinary repertoire of Andalusian refugees who knew perfectly how to marry the sweet and salty, sour and soft with different herbs and spices, including saffron and coriander.

Remember, that lemon tagines, prunes or olives are Andalusians. Nor should we forget the origins of the Berber couscous.

To preserve the intimacy of the place, only 1 or 2 tables are available exclusively under reservation for non residents. Must be booked by phone before noon for the evening of the same day.
